4th of July, Breakfast, & the Week in Review

Happy Saturday!
I'm so sorry I've been neglecting you.
I've been focusing on the 31 Days of Yoga group but I'm back now.  Let's do this thing.

Did you have a great 4th of July?

I started mine by making Mandy this breakfast...

...it's like a pancake in a pan.  I'm still working on the recipe and I'll pass it on next week when I get it right.  For now, you might be interested to know that it puffs up like this in the oven.

Then I chopped up some onions & peppers...

... which ended up in my egg whites for breakfast.

Later in the day we hosted a big 4th of July picnic.  It included tons of fun, swimming and loads of great food.  I didn't take many pictures because I was busy having fun.  Plus, I try not to alienate my family by following them around with my phone and putting them on the blog.

But, I did snap this picture of my adorable youngest niece, Raegan.
