The Ultimate Yogi & I'm Going Vegan for Three Days

I find it hard to believe that I am nearing the end of the first third of The Ultimate Yogi program.  At the end of each phase there is a cleanse that is recommended.  The first phase ends with 3 days of Vegan eating.

Now, when I started this program I looked over the schedule & decided that I would do the yoga but I would not change my eating habits.  After all, The Fast Metabolism Diet just took me off the roller-coaster of dieting.  I now eat whole foods that fuel my metabolism (and fuel my life) so why would I want to change that?

But, as time went by I started wondering "why not?".  It's three days, right?  Plus, my diet is already loaded with fruits & vegetables.  Surely I could skip the meat for a few days.  When I mentioned it to Katie she said, "Mom, this isn't going to be that hard for you.  When you get a better-than-average salad in a restaurant you act like they brought chocolate."  Hmm...

I've spent the last couple of weeks seeking out vegan recipes to try.  If I'm doing this, I'm eating some good food! I asked some blogger friends to share their best recipes and hit the jackpot.  These ladies can cook.  (they are also very good at taking pictures of their food)

Here are a few highlights of the recipes I'm excited to try.  Enjoy!

1. I love my slow cooker, so I was immediately drawn to this Black Bean & Veggie Soup recipe from SkinnyMs.

2. A list of internet veggie recipes would not be complete without a visit to Jenn over at Peas and Crayons.  I will definitely be trying her Freaking Fabulous Guacamole.  Side note- Jenn is the great mind behind my favorite day of the week, What I Ate Wednesday.

3. And how about this Chocolate Almond Banana Blueberry Smoothie from Fitful Focus! Yum!

4. My friend Jill at Fitness Health & Happiness is always making salad in a jar.  I have been meaning to try it and perhaps my vegan days are just the right time.  (ok, the truth is that I don't actually know Jill.  I like to think we'd be friends if we met.  Or I might be stalking her- it's hard to say)

5. And just in case you worried that being a vegan meant giving up goodies, I found this recipe for Strawberry Banana Bread from Sensual Appeal.  I'll probably try some substitutions in this recipe- I'd rather use Almond Flour or Oat Flour.  I'll let you know how it works out!
