What I Ate Wednesday- Prepping for a Fast Metabolism

Happy What I Ate Wednesday!

Since starting the Fast Metabolism Diet, I've done more food planning than ever.  I am loving having healthy options ready to go in my refrigerator!  Also, the meal maps in the book take the guesswork out of my eating. 


Ken is not following the plan with me, but he has a really busy week going right now.  So, last night I spent some time making these Egg cups for him.  They include eggs, sausage, peppers, onions & cheese.  I bake them in cupcake tins & then he can quickly warm them up for a good breakfast.


I put two in each container and he's good to go for the rest of the week.


I chopped up my own peppers & onions for breakfast...


...and this morning I scrambled them with my egg whites.


(Phase 2 breakfasts are all about protein & veggies)

Here are just a few of the other things I've been enjoying on this diet.  By the way, Haylie Pomroy (author) says that DIET stands for Did I Eat Today?  As you can see, the answer is yes!
