WIAW- Greenified!

Happy What I Ate Wednesday everyone!

I hope you're all having a great week so far.
Our week started with the traditional St. Patrick's Day green pancakes.

I've been making these since the girls were little and now they expect them.  Sometimes I use a cookie-cutter and cut them into shamrock shapes.  But, this year I somehow made them a little too small for that.  Oh well. 

I also found that I had used up all the green food coloring. (why? no idea. I just live here)  
So I mixed yellow and blue. Surprise! The green was more intense than usual.  
They looked great and tasted even better.

Monday marked the beginning of our weight loss re-start. Ken & I are cleaning up our diet together now that everyone in the house is healthy again.  When we were sick we felt like we just had to eat whatever agreed with us- no plan.

I spent Sunday evening chopping veggies so that we would be ready to made salads
or for use in recipes.
On the top right you'll see the eggs I made for Ken's breakfasts.
(he has to eat breakfast in 30 seconds or less or he's not happy)
