It's a Low Carb WIAW & a Guacamole Recipe

It's our favorite day! What I Ate Wednesday!

I've been working to follow a low carb diet this week.

On Sunday afternoon I came home from church & made breakfast for lunch.
Katie, Mandy & I love doing that.  Scrambled eggs, bacon, toast & hash browns.
 (I skimped on the hash browns- really, I'm doing the low carb thing)


My breakfasts have been more like this- egg, bacon & tomatoes.

I went to Sam's Club on Sunday and got this ginormous bag of Romaine.

Ken actually questioned my ability to eat all of it before it goes bad. 
Ha! I'll be surprised if it lasts for a whole week.

Lunches this week are made of the Romaine, cheese, tomatoes and shredded beef.  I cook it in a little olive oil with some Italian seasoning.  Delicious!
I also dump Ranch on it, but I took the picture before I added dressing.

I also bought a little bit of Ranch at Sam's Club.
How long do you think that will last?

I forgot to share this Guacamole recipe with you last week.  I made it for Katie to share at a party.  I wasn't there, but I'm told that it was enjoyed by many.
You'll need:
4 ripe avocados
Juice of 1 lime
1/2 medium white onion, peed & diced (about 1/2 cup)
1 tomato, cored & diced (about 3/4 cup
2 Tbsp chopped cilantro
1 jalapeño pepper, seeded & minced
Sea Salt to taste

1. Remove avocado pit; Scoop out the flesh into a bowl. Squeeze the lime juice over the avocado. Mash with a potato masher. (it should be slightly chunky).

2. Add onion, tomatoes, cilantro and jalapeño; mixx it all together and add salt to taste.

Enjoy with veggies or tortilla chips or whatever you like dipping!
