Happy Friday everyone!
Do you ever get to Thursday night and just feel like Friday is something you just have to get through in order to find the weekend? I'm pretty sure that's how Katie & Mandy felt yesterday. Between the amazing weekend followed by some Monday let-down, I think this has been a long week for them.
But, we have arrived... the weekend is here. And we are ready for it!
I just finished texting with Ken about our dinner plans. He agreed to grill me dinner and get me some wine. I agreed to do the grocery story run and get some clams. It's all good.
This past week I made some turkey chili for dinner.
(that was the day it snowed. Chili makes sense right?)
My recipe is made with ground turkey, peppers & onions and garlic. I don't use a seasoning mix, just a handful each of cumin & chili powder. It's just the thing for a cold night.
I found this huge bag of sweet peppers at the grocery store.
Friends, I nearly swooned. These were great in the chili and I've been snacking on them all week.
I even made the kiddos some corn muffins to go with the chili. Some of the wrappers had monkeys on them, but when I ran out I used the shamrock ones leftover from St. Patrick's Day. Classy, huh?
This week I also switched my Tim Horton's beverage. I'm taking a holiday break from the carmel mocha latte and enjoying the peppermint mocha latte instead. (yum!)
At home I've been brewing this new Cinn-a-nut coffee.
It's acceptable on it's own, but better with the addition of some Torani sweeteners & Almond milk.
I've tried carmel & vanilla so far, but I'm not finished experimenting.
I'll let you know when I've got it just right.
In case you're wondering, I'm still doing the South Beach Diet. Unfortunately, I got a bit off track last weekend. I'm back at limiting my carbs now though and I do feel better.
