What I Ate Wednesday!

This week's breakfast has been a continuation of this version of
my favorite smoothie.

1/2 a banana
handful of strawberries
almond milk & soy milk
(I don't know how much- I just eyeball it)
1 scoop vanilla protein powder
dallop of natural peanut butter
1 TBSP flaxseed
3 crushed ice cubes

I whip it all up with my Magic Bullet.  Today it was a little chunky and I couldn't use my fancy stainless steel straw.

I hope this doesn't mean that my Magic Bullet is dying.

The other day Grandma Glo came in and saw the Magic Bullet on my counter and said, "Hey, I have one of those. I never use it." What?? I use mine every day.

So I guess if mine dies I'll just go borrow hers. Permanently. Apparently she'd never even notice.

Katie & Mandy had some oatmeal this morning.  They couldn't resist topping it with some PB Crave.  Katie had Coco Bananas, Mandy had Cookie Nookie.  They looked pretty much the same so I only took the one picture.
Mandy wants me to tell you not to be fooled- it looks gross, but it tastes really good!

My lunch all week has been rotisserie chicken with romaine lettuce, cucumbers, tomatoes, & parmesan cheese.  Ranch dressing on everything- I love ranch!

Tonight I roasted some veggies.  I had a zucchini, an eggplant and some roma tomatoes.  I put a little EVOO in a baking dish and put in the cut veggies with garlic salt and pepper.

They went in the oven at 350 degrees for about 40 minutes.  Then they got a coating of mozzarella and went back in for just a few minutes.
Delicious.

I also made these brownies and ate a big one last night after the swim meet.  
I put some homemade low calorie ice cream on top along with some PB2.

It's been a week of great eats around here.  Good thing too, because I have hungry swimmers to feed.
