Pumpkins, Protein & Raisins... oh my!

Katie likes protein bars.  Clif, Kashi, Odwalla - you name it.

But recently I read The Eat-Clean Diet Recharged by Tosca Reno.  You can read my review here. Although I did not put the kids on the diet, I am attempting to feed them more food, less chemicals.  So tonight Katie baked Pumpkin Protein bars, a recipe we found at sparkrecipes.com.

We added raisins even though they weren't in the original recipe.  But, we thought they'd taste good!
Katie did all the prep work... I wonder if I could get her to make dinner tomorrow?
And they turned out yummy!
We substituted 3/4 cup Splenda for the Stevia.  Splenda is not actually Eat-Clean diet approved, but Stevia has a slightly bitter taste when you bake with it.  Other than that, the recipe is full of REAL FOOD.  We can pronounce all the ingredients!  

One of these and a piece of fruit will make a great, filling breakfast tomorrow. Thanks Katie!
